Tiramisu just for you

I made these for my boyfriend Dylan's birthday in February and they were pretty damn good, even for someone like me who isn't too crazy about tiramisu. The best part is the mascarpone frosting-it's the perfect amount of sweetness.






Ladyfinger Recipe

These can also be made into plain ladyfinger cookies if they are piped on a baking sheet
  • 4 eggs, separated
  • 2/3 cup + 2 tbsp white sugar
  • 1 cup all-purpose flour
  • 1/2 tbsp baking powder
  • Liquid Coffee Layer:
  1. 2/3 cup boiling water
  2. 1/2 cup confectioner's sugar
  3. 1 1/2 tbsp instant coffee
 1. Preheat oven to 400 degrees
2. Place egg whites in a bowl and beat on high until soft peaks form.
3. Slowly add 2 tablespoons of the sugar and continue beating until stiff and glossy
4. In another bowl, beat egg yolks and remaining sugar.
5. Whip until thick and pale in color
6. In a small bowl, whisk together flour and baking powder
7. Fold half the egg whites into the egg yolk mixture
8. Fold in flour and then add remaining egg white
9. Fill cupcake liners and bake for about 10 minutes.
These cupcakes will be a lot more dense than the average cupcake.
Makes 12 cupcakes

Mascarpone Frosting
  • 1 cup heavy cream
  • 8 oz mascarpone (at room temp)
  • 1/2 cup sifted confectioner's sugar
  • unsweetened cocoa powder for dusting
Whisk cream on medium speed until stiff peaks form. Do not over beat!!! In a separate bowl, whisk the mascarpone and sugar until smooth. Gently fold the whipped cream into the mascarpone mixture.

 After the cupcakes cooled, I poked holes in each with a toothpick. Then I mixed together the boiling water, confectioner's sugar and instant coffee. Once all was dissolved I brushed the liquid on the cupcake tops until they were pretty moist. You want to make sure there will be some coffee flavor so don't be afraid to douse them. Then I piped on the frosting using a wilton 1M tip. It's beautiful, I love it. Afterward I added some chocolate shavings to make them even prettier.
