Chocolate Chip Cookie Dough Cupcakes

These were really fun to make. My cousins sent me the recipe from here. The cake was pretty dense, more like the consistency of a muffin, delicious nonetheless. My Mom suggested trying it with banana cream cheese frosting next time and it is now on my To-Bake list!

And I got a new cupcake stand! It makes its debut appearance in one of these pictures. Thank you Homegoods.

Raspberry Cupcakes with Lemon Cream Cheese Frosting

I cannot wait until Summer for many reasons. One of them is that July is raspberry picking season! I have not met a fruit I didn't like, and raspberries rank very high in my favorites. I liked adding fruit to the cupcakes. It made me feel like this recipe was a bit healthier...though probably not!

I used the cake recipe from this book that was a gift from my Grandma. Primrose Bakery is all the way in London, so I won't be trying their cupcakes anytime soon. I still haven't perfected their unique way of frosting the cupcakes as shown in the top center picture, but I am trying.

Happy Easter!

Yay for Easter! My favorite thing about this holiday is one of its mascots, bunnies! I wonder how the Easter bunny came to be associated with this wondrous holiday.
Isn't he adorable? I want one, but my Mom doesn't want to have to take care of it next year when I'm off at school. Oh well, someday.

My Easter weekend has been filled with cupcakes! I made two dozen for Emily for Saturday, a dozen for Caroline for today, a dozen for my own family, and I assembled a mixed bag dozen for Dylan's family. I've been very pleased with how they all turned out, though my feet hurt from prancing around in the kitchen these last two nights and mornings. All very worth it, however. It always is.

Vanilla Cupcakes with Blackberry Buttercream Revisited

I made these yesterday for Brian to give to Payton for her birthday! Yay! Happy Birthday Payton! He said that she had really liked the blackberry cupcakes from the Pippin cast party so of course I made some again. It was a lot quicker the second time around. I think they look very cute and Spring-y.Yay, Spring! I hear there is some nice warm weather coming on Monday!

Third Order! Triple Chocolate Cupcakes!

My third order was this week, for my friend Emily T. She wanted a dozen cupcakes for her Dad who apparently must absolutely adore chocolate because Emily requested chocolate cupcakes, with chocolate frosting and for half to be filled with even more chocolate, making it triple decadence. So, due to this request I came up with a general chocolate cupcake recipe and topped them with a rich chocolate cream cheese frosting and filled the 6 with thickened chocolate ganache. I had never made ganache before and it was really simple to my surprise! Then I curled some pretty chocolate shavings to decorate. Yum!

Fun Fact: Ganache supposedly got its name when a worker in a French kitchen accidentally dropped the chocolate into a bowl of heavy cream and the chef called him ganache which apparently is "idiot" or "fool" in French.

Peanut Butter Cup Cupcakes & A Capella

Last night was A Capella Night, and if you did not attend, you really should have! All the groups that performed were great, although my favorites were the Stonehill and Worcester groups. The "Girls from the Hill" sang a rendition of Lady Gaga's "Born this Way" and it was wonderful. So, if Micro finance club puts one on again next year, I HIGHLY recommend going!

Katherine had asked me during musical if I would make cupcakes for A Capella Night. And of course, I did. She even named me as one of their corporate donors in the program. It was very cool to see "Sweeter by the Dozen" on there. So official and everything.

I made chocolate cupcakes with a mini Reese's baked into it, and topped them with peanut butter buttercream and chopped up Reese's. I'm surprised it took me this long to make a peanut butter/chocolate combo, Reese's are my favorite. To my delight, all two dozen cupcakes sold pretty quickly and I got great reviews! Especially from Trevor and Sammie!
